The Fast Casual Restaurant Manager is responsible for the day to day running of the restaurant, managing all Herbie Butcher’s Fried Chicken (HBFC) staff, managing related inventory, and ensuring food and personnel safety in the department. The manager ensures that each employee is proficient in the making of each product that we sell, as well as, frying chicken. Product knowledge must be constantly updated as new recipes and concepts are being developed and produced.

Herbie Butcher’s Fried Chicken is located at 735 E 48th Street in Minneapolis.

Full-time employees receive medical & dental insurance, PTO, select paid holidays, life insurance, and supplemental benefits. Salary is based upon experience; minimum $42,000 per year.

Primary responsibilities include but are not limited to:

Food Preparation:

  • Review daily orders and set priorities for staff. Ensure that all food is prepared in appropriate sequence in accordance with customer orders, taking prep time and volume into consideration
  • Assign daily tasks to staff and self, including preparing food and designating work stations for the day
  • Retrieve appropriate recipes and gather all ingredients to prepare food, and do so quickly and efficiently
  • Communicate and interact with staff to coordinate food production
  • Dredge and fry chicken
  • Make sauces and dips
  • Wash, chop, and prepare vegetables
  • Mix milkshakes

Food Quality and Nutrition Safety:

  • Ensure that all fresh ingredients and end-product meet HBFC food quality standards
  • Enforce, educate employees on, and adhere to all sanitation standards, including those for cross-contamination of allergens
  • Train, monitor, and follow FIFO processes regarding kitchen products and ingredients in kitchen storage and in both coolers

Supervision / Leadership:

  • Oversee the supervisors, delegate operational and supervisory responsibilities as applicable
  • Provide new employee onboarding, training, work direction, performance feedback, and serve as point of contact for attendance
  • Ensure that the shop is properly opened and closed, and all kitchen set up and take down procedures are followed by all staff members
  • Handle general employee and facility issues, reporting larger concerns to THB upper management for resolution
  • Ability to build work relationships with the team, vendors, and all guests

Administrative management:

  • Create the schedule independently or in conjunction with THB upper management
  • Review timecards
  • Communicate with vendors
  • Monitor facility budgets and meet with THB upper management to review on a weekly basis, implement cost saving measures and efficiencies, ensure expenses are below or at required budget levels
  • Review daily orders to determine workload, preparation needs, and appropriate staffing levels
  • Help create and foster a positive work environment for employees within the facility
  • Conflict management: When issues arise within the facility, report and discuss with THB upper management and solve within a timely manner

Required Education and Experience:

  • Three or more years of managing a fast-casual restaurant setting required
  • Five or more years of back-of-house, cooking, prepping, baking, or other kitchen experience required
  • Current ServSafe® Manager Certification for State of Minnesota
  • High school/GED reading level for reading and comprehending recipes and safety standards
  • Line cook experience required
  • Able to work a flexible schedule including working nights and weekends
